Randy and Teri Nicolai flew to Mesa, Az on January 11 to celebrate her Mom, Bev Winchell's, 80th birthday. It was a complete surprise with about 80 people helping to celebrate and sing karaoke with her. The weather was great, food was good, and pretty decent singers, too! Marley and Marlene Reinardy from Hampton, and Jan and Ben Unger from Cannon Falls were also there. From Mesa, they drove to Las Vegas and did their "share" to stimulate the economy. "It was a nice trip but hard to come back to this Polar Vortex!", Teri said. Happy Birthday, Bev!
Punta Cana, Dominican Republic is the new favorite winter destination for Colleen and Mike Srese, Mary Kay and Jeralyn Irrthum, Glen Mulvihill and Carol Schuhwerck, Joanie and Phil Peterson, and Tom and Pat Otte. The catamaran cruise was fun, the weather was perfect and Mary Kay, Jeralyn, and Joanie like the zip line. The group now has a pair of "community" swim trunks! Thanks, Glen!
It was another great weekend of basketball at RHS! It's always fun when the boys and girls both play at home the same night. It was "fill the gym" night and prizes were given away - Meredith Taylor and Josie Fields were the winners of tablets. The varsity boys won their game - a real nail biter. Unfortunately, the varsity girls lost to a tough Lyle-Pacelli team, but they played hard the whole game. Both JV teams won.
The 5th and 6th Grade Girls hosted a basketball tournament last Saturday and Randolph 5th Graders were Consolation Champs. Congratulations, Girls!
Congratulations to our Rockettes Dance Team - they took first place again last Saturday at the Mayer Competition!
We know we just had a recipe for oatmeal in the column, but these sound so good and something to make and grab on those busy (and cold) mornings.
Cupcakes To Go
Makes 24-25 cupcakes
5 C. rolled oats
21/2 C over ripe mashed
1 tsp. salt
5 packets Truvia (stevia
sweetener) (or can use
pure maple syrup or
Optional - 2/3 C mini
22/3 C. water
1/4 C. plus one T oil
(suggested: coconut oil,
but veg. oil will work
21/2 tsp. vanilla extract
Optional add-ins: cinnamon, shredded coconut, chopped walnuts, ground flax or wheat germ, raisins or other dried fruit.
Preheat oven to 375° and line 24-25 cupcake tins. In large mixing bowl, combine all dry ingredients and stir very well. In separate bowl, mix and stir all wet ingredients (including bananas). Mix wet into dry, then pour into the cupcake liners and bake 20 minutes. May also broil for 1-2 min. (optional).
Can be frozen and reheated.
Don't forget - Randolph WILL have school on Monday, January 27! Sorry, kids!
